One Dish Vegetarian Dinner
As a vegetarian, a lot of my recipes happen to be vegan, or would be if i simply left off a sprinkle of cheese or a fried egg.

This is a quick and easy meal if you live alone. Leftovers heat well in the microwave. Filling and delicious.
Ingredients | Dinner Inspiration Vegetarian1 (16 ounce) package penne pasta4 cloves garlic, minced¾ cup olive oil1 large head fresh broccoli, blanched1 (6 ounce) can sliced black olivesDirectionsCook pasta in large pot with boiling salted water until al dente. Drain well.In a medium skillet over medium heat cook garlic in olive oil, being careful not to allow garlic to burn.In a large bowl add the cooked broccoli, cooked and drained pasta, and black olives.To serve, pour garlic oil over pasta and vegetables.
